Americans can thank Sarah Josepha Hale, the woman who wrote the song "Mary Had a Little Lamb," because, in addition to writing that song, she also wrote letters for 17 years campaigning for Thanksgiving. And while we are glad she did, and it is a great day to gather with our friends and family and be thankful, what the day is really about is the food! Though over the years, there have been several food trends, some of which have become traditions. Turkey was most likely NOT on the menu at the original Thanksgiving, but deer, ducks, geese, oysters, fish, and pumpkins probably were. As Thanksgiving grew in popularity, the turkey became a popular dish because they were an easily accessible big bird that could serve many in a plentiful feast. Even today, most families' Thanksgiving feasts include a turkey weighing on average 15 pounds or more. A popular side dish, the green bean casserole, was created by Campbell's soup in a cookbook in 1955. Every Thanksgiving, they now sell about $20 million worth of cream of mushroom soup. In the late 1980's, a new main dish, the turducken, got a lot of talk thank to football commentator John Madden. The turducken is a chicken stuffed into a duck stuffed into a turkey. But this massive meat delight didn't catch on and outrun the turkey as the Thanksgiving table staple.
